Cauliflower and Pepper Side Dish

Cauliflower, red and green peppers baked together to create a creamy and crunchy side dish.

Preparation time: 10 minutes
Cook time: 35 minutes
Servings: 4-6

Ingredients:
1 large cauliflower, broken up and rinsed
1 teaspoon salt
1/2 cup Colby jack cheese, diced
1/4 cup corn flakes
1/2 cup sour cream
1/2 cup plain yogurt
1/2 cup green pepper,diced
1/2 cup red pepper,diced
1/4 teaspoon black pepper
1/4 cup Parmesan cheese

Garlic bread (mix butter/margarine, garlic powder, parsley)

Friday Left over’s or freebie Friday
Saturday BBQ SandwichCurly fries and Cole slaw
Sunday Baked chicken (lemon, rosemary)
Baked sweet potato
Sugar snap peas

Sweet Potato Spinach Pizza

Most of the time pizza is made with cheese and pepperoni, but not this pizza. Sweet potatoes and spinach topped on mozzarella cheese.

Preparation time: 15-20 minutes
Cooking time: 30-35 minutes
Servings: 4-6

Ingredients:
Non stick spray
1 pre-made 12 inch pizza crust
1 medium sweet potato, peeled and thinly sliced
1 medium onion, thinly sliced
1 teaspoon sugar
2 teaspoons oil (your preference)
1/4 teaspoon black pepper
1 1/2 cups mozzarella cheese
1 (10 ounce) box spinach, thawed and excess water squeezed out
1 cup precooked, thinly sliced ham

Directions:
1. Follow directions on pre-made pizza crust package.
2. In medium bowl, combine sweet potato, onion, sugar, oil, and black pepper until well mixed.
3. Scatter 3/4 cup mozzarella cheese over crust. Top with spinach, sweet potato mixture, and ham, and scatter remaining cheese over pizza.
4. Place in oven on bottom rack, bake until sweet potato and onion is fork tender. (bake temperature is on crust packaging)

Tips
#1 refrigerated pizza crust can also be used
# 2 Spread pizza sauce on crust before cheese for added moisture.

Go Green with the Green Police

The go green movement has affected people all around the world. A lot of people are getting involved in it by recycling, walk or riding their bikes to school or work, using recycled products and much more. There is one way you can get involved in the go green movement by conserving your food. You can only make the food you are going to eat or eat your leftovers instead of throwing them away. One way you could go green is by making your meals stretch out. Let’s say you are having roast on Tuesday why not make enough to eat with the stir fry you are having on Friday. Another way you can go green is by having a small garden to grow your own vegetables and fruits. Even if you live in an apartment you can grow your vegetables and fruits in pots. By growing your own food you help the environment because plants give off oxygen which we need to breath. In some areas around the world the Green Police are visiting businesses to check if they conserving energy to help the environment .Businesses can help with appliances that conserve energy and not give off carbon. The Green Police is working with the government to inspect the electric bills and gas bill of company in order to reduce the amount of carbon in the area.

Looking for a Healthier You

Finding the best way to eat healthy is not easy. Most people struggle just to get food on the table let alone eat healthy. It is so much easier to pick up snickers candy bar, hoho sweet treat or a can of soda pop. Some people who have attempted to eat healthy do not know where to start so they just give up. Finding a plan like jenny craig could be a way to attempt to change your diet habits which involves a lifestyle change too. Changing your diet involves a lot of discipline and strength. But if you have the will to persevere you will make it. Even if you fall behind does not mean you have failed at your goal of eating healthier. You do not have to wait until 2011 to start a healthier diet, you can do it today. If you are not ready to do a total change today you could change the diet habits of one meal then gradually move on to other meals. Actually, doing things gradually might work better for a lot people as most of us do not like change. It might be that we are afraid of change or it might be that we really do not want to change, but if it is important we need to follow through. A change of diet might be eating more fruits and vegetables or it might be leaving the cans of soda pop in the dust. However, you decide to try things all that matters is you try and it is okay if you do not try today. It might not be the day to make those changes for you.
