Usually I share what we had for dinner,but today I will share what we had for breakfast.Our breakfast was served with either coffee or tea and a glass of juice. I had apple juice and cranberry juice, but any juice would do.

7 Large Eggs
1 1/2 cups shredded Cheese (your choice-I used swiss and cheddar.)
1/4 Teaspoon pepper
1/4 Teaspoon salt
1 Tablespoon Margarine or butter for bread & Pan
1 small Onion (finely chopped)
4-5 slices bread
1 15 ounce bag of spinach
1. Preheat oven to 350 Degrees
2. Drain Spinach well.
3. Mix all ingredients together except 1/2 cup cheese, bread and butter in a large bowl.
4. Butter bread and oil pan well. Cut bread into bite size pieces. Layer bottom of pan with pieces of bread.
5. Pour egg mixture over bread slowly. Sprinkle cheese over top of egg mixture. Bake for 30 minutes or until tooth pick comes out clean.
Optional: Top with Tomatoes after done baking.
