Serves: 4</span></p>
<p><span style="color: #0000ff;"><strong><span style="text-decoration: underline;">Ingredients</span></strong></span></p>
<p>2 lbs ground beef (drain off fat)<br />
1 large can whole kernel corn (drain)<br />
1 can black eyed peas (15 ounces) (drained and rinsed)<br />
1 large can diced tomatoes (do not drain)<br />
1/2 small jalapeno peppers (diced and seeds removed)<br />
3/4 pkg ranch style dip mix (in packet)<br />
16 ounces water<br />
1 small can ripe olives (sliced)<br />
1-cup onions- (chopped)<br />
1 pkg taco seasoning mix (in packet)</p>
<p><strong><span style="text-decoration: underline;"><span style="color: #0000ff;">Directions</span></span></strong></p>
<p><span style="color: #0000ff;">1.</span> Brown ground beef in a large saucepan and drain.<br />
<span style="color: #0000ff;">2.</span> Pour corn, black-eyed peas, tomatoes, jalapeno pepper, onions, ranch style dip, water, and taco seasoning mix into large saucepan with meat; mixing well.<br />
<span style="color: #0000ff;">3.</span> Cook covered on low heat for 15 min. Next, add olives, mix well and serve.</p>
<p><span style="color: #0000ff;"><strong>Tip: </strong></span>Substitute green olives for black olives.Serve as vegetarian by removing the ground beef.</p>
<p><strong><span style="color: #0000ff;">Optional:</span></strong> Use Turkey or chicken in place of ground beef.</p>

<p class="MsoNormal"><span style="color: #0000ff;"><span style="text-decoration: underline;"><strong>Ingredients</strong></span></span></p>
<p class="MsoNormal">5 large tomatoes</p>
<p class="MsoNormal">2 cups Italian bread crumbs</p>
<p class="MsoNormal">2 large onions, sliced (yellow, purple, or vidalia onions your choice)</p>
<p class="MsoNormal">4 tablespoons orange juice</p>
<p class="MsoNormal">3 tablespoons honey</p>
<p class="MsoNormal">1 1/2 tablespoons of thyme</p>
<p class="MsoNormal">1 clove garlic minced</p>
<p class="MsoNormal">3 1/2 tablespoons olive oil</p>
<p class="MsoNormal">3/4 cup Parmesan cheese</p>
<p class="MsoNormal">1 1/2 tsp salt</p>
<p class="MsoNormal">1-teaspoon pepper</p>

<p class="MsoNormal"><strong><span style="text-decoration: underline;"><span style="color: #0000ff;">Directions</span></span></strong></p>
<p class="MsoNormal">
<p class="MsoNormal"><span style="color: #0000ff;">1.</span> Preheat oven to 425 degrees, you will need a deep baking dish</p>
<p class="MsoNormal"><span style="color: #0000ff;">2 </span>Use 1 tablespoon of olive oil to coat baking dish, spread evenly.</p>
<p class="MsoNormal"><span style="color: #0000ff;">3.</span> Slice tomatoes, and onions into thick slices. Lay the tomatoes and onions at an angle, starting with tomatoes. Repeat until all tomatoes, and onions are used.</p>
<p class="MsoNormal"><span style="color: #0000ff;">4. </span>Warm up orange juice, honey, thyme, salt and pepper in olive oil on low heat in saucepan for five minutes. Mix constantly and then add breadcrumbs and Parmesan cheese to mixture. Cook until mixture is well mixed.</p>
<p class="MsoNormal"><span style="color: #0000ff;">5</span> Pour breadcrumbs mixture all over the tomatoes and onions. Next sprinkle finely chopped minced garlic all over.</p>

<p class="MsoNormal"><span style="color: #0000ff;">2. </span>Heat margarine and oil in a large skillet; potatoes, onions, salt, pepper and, garlic powder. Cook until potatoes are fork tender, maybe 15 minutes, mix occasionally.</p>
<p class="MsoNormal"><span style="color: #0000ff;">3.</span> When potatoes are soft mix in bell peppers, and polish sausage stir well cover and cook additional 10-15 minutes, or until polish, sausage is cooked.</p>

<p class="MsoNormal"><strong><span style="color: #0000ff;">Tip: </span></strong>You can substitute leftover chicken for polish sausage.</p>

<p><span style="color: #0000ff;"><span style="text-decoration: underline;"><strong>Ingredients:</strong></span></span></p>
<p>2 lbs round steak (tenderized)<br />
2 bell peppers chopped (any color)<br />
2 medium onions chopped<br />
3/4 cup flour (all-purpose)<br />
2 tablespoons canola oil<br />
2 cans stewed tomatoes (14.5 oz)<br />
2 stalks celery (with leaves)<br />
2 beef bouillon cubes<br />
1/2 tsp garlic<br />
Salt and pepper to taste</p>
<p><strong><span style="color: #0000ff;"><span style="text-decoration: underline;">Directions:</span></span></strong></p>
<p><span style="color: #0000ff;"><strong>1. </strong></span>Place in a ziploc bag flour, garlic, salt and pepper. Next, add the serving size pieces of round steak to the Ziploc bag, mixing well.</p>
<p><span style="color: #0000ff;"><strong>2.</strong></span> Brown the coated steak on low heat on both sides. Set steak aside in between two plates to keep warm. Next, place the bell peppers, celery and onion in same skillet and fry until translucent. Last, place the steak back in the pan with the bell pepper mixture and pour the tomatoes over the steak and bell pepper mixture.</p>
<p><span style="color: #0000ff;"><strong>3. </strong></span>Sprinkle garlic all over, simmer covered on a low temperature for 45 min .check occasionally and stir.</p>
<p><strong><span style="color: #0000ff;">Tip</span>:</strong> I threw in 2 beef bouillon cubes for extra beef flavor.</p>
<p><span style="color: #0000ff;"><strong>Optional:</strong></span> Add meat tenderizer to your steak to make your steak tender.</p>
