Serves: 4

Ingredients

2 lbs ground beef (drain off fat)
1 large can whole kernel corn (drain)
1 can black eyed peas (15 ounces) (drained and rinsed)
1 large can diced tomatoes (do not drain)
1/2 small jalapeno peppers (diced and seeds removed)
3/4 pkg ranch style dip mix (in packet)
16 ounces water
1 small can ripe olives (sliced)
1-cup onions- (chopped)
1 pkg taco seasoning mix (in packet)

Directions

1. Brown ground beef in a large saucepan and drain.
2. Pour corn, black-eyed peas, tomatoes, jalapeno pepper, onions, ranch style dip, water, and taco seasoning mix into large saucepan with meat; mixing well.
3. Cook covered on low heat for 15 min. Next, add olives, mix well and serve.

Tip: Substitute green olives for black olives.Serve as vegetarian by removing the ground beef.

Optional: Use Turkey or chicken in place of ground beef.

As Promised here is my recipe for hobo stew. I hope it fills your families bellies as it has my family from one generation to the next.This recipe was originally created by my grandfather which I have added my own twist to the recipe. You know us cooks love to play mad scientists in the kitchen. While my Grandfather worked on the railroad he would cook this recipe by campfire. Its a recipe they all learned to love and he was known for this recipe.

Well tonight’s recipe was my version of my  Grandfather’s  Hobo stew and it almost turned in to another disaster. I had to use minced onions because I ran out of onions. Well the minced onions had a mind of their own. The lid came flying off the bottle and well their went all my minced onion. AGHH! I thought to myself what shall I do, well it turned out alright thankfully. So what can I say Ms Recipe sure does keep making mistakes. I’m beginning to think that the kitchen fumes are getting to me. So I share with all my readers who are learning to cook even a seasoned cook can make recipe mistakes in her kitchen…. Today was a day full of reorganizing my office and writing up my herbs and spices list, which is soon to come. It will be full of suggestions of what kind of foods go together with either the herb or the spice. I think it will be something helpful to all cooks out there. It is important to link up the right food with the right spice. It makes things taste so much better. I have been compiling the list for a long time, just organizing it so I can share it with everyone.
