1.To cut down smell of Broccoli while your cooking add a couple slices of stale bread. Use a slotted spoon to remove bread when finished cooking.

2. Carrots will stay fresher longer if you cut off the tops and wrap them in a dry paper towel. The tops pull the moisture from the carrots so the ends dry out so this helps them stay fresh.

3. Use a wet toothbrush to remove silk from corn on the cob. Just run the toothbrush in a downward motion to remove all the silk.

4. When cooking eggplant remove the skin if your cooking a short periods of time,but you don’t have to remove the skin if your cooking it for long periods of time.

5.A pinch of sugar enhances the flavor when cooking tomatoes.

Vanilla Cherry Surprise

Most people would agree that angel food cake just don’t have much flavor. If you jazz up the angel food cake, it’s almost as good as chocolate cake. No nothing cake out do chocolate cake, but I must say cherry cake is not far behind.

Ingredients

1 1/2 Cans Cherry Pie Filling
1 box Angel food cake
1 teaspoon vanilla extract
1/8 teaspoon almond extract
Pinch of black pepper

Directions

1. Preheat oven to 350 degrees
2. Mix angel food cake according to package directions. Mix in pie filling, vanilla extract, black pepper, and almond extract.
3. Spray 9X13 baking pan with cooking spray then pour cake mix into pan. Bake for 30 minutes or until toothpick comes out clean.

Optional: Serve with Cool whip.

Kitchen Tips #7

1. Freeze leftover vegetables in a container to use in a soups or sauces. Once the container is full blend them in food processor or blender with just enough broth or water to keep them from turning into a ball.

2. Pour beef drippings in a ziploc bag or ice cube trays and freeze. They make perfect beef stock.
3. Freeze steak, roast, ham and chicken bones to use as flavoring for soup.
4. Pour a few drops of lemon juice into the pot while your cooking rice and your rice will not lose its brilliant white color. This is great for times when your trying to impress your company.
5. Cottage cheese lasts longer turned upside down in  the refrigerator.

One of America’s old time favorites fruits is  the apple because its a  complement to just about any recipe. You can bake them, throw em’ in a salad and you can even bake them with pork chops or chicken. As a sweet tooth myself I bring you a tasty desert so now their no excuse to get your daily apple to keep the doctor away. Enjoy and happy cooking.

Ingredients
7 Medium to large golden delicious apples (cored and thinly sliced)
1 1/2 Tablespoons vegetable oil or canola oil
1 Teaspoon cinnamon
1 cup oatmeal (do not use instant)
1 cup plain applesauce

2 Tablespoons unsalted butter cut into small pieces

4 teaspoons light brown sugar – firmly packed

Directions

1.Preheat oven to 375 degrees, take butter out of fridge, and spray 2 quart baking dish with cooking spray.

2.Mix apples with applesauce in a large bowl until well coated. Pour mixture into baking dish spreading out evenly.

3.In the same bowl that you used for apples; mix the cinnamon, brown sugar, and butter with a fork. Finally,  pour mixture over the apples in the baking dish.

4. Bake for 30 min or until apples are bubbling, and topping is a golden brown.

    Quick Shepherds Pie

    salisbury-steak-frozenA simple way of making shepherds pie without all the fuse of preparing all the ingredients. This is a great dish for the family that’s in a hurry all the time, but wants their family to have great meal with all the necessities in life.

    Prep 10-min
    Cook 55-60 min
    Serves 5-6

    Ingredients

    1 28 ounce package family size Salisbury Steak patties by Banquet frozen Meal
    4 cups instant mashed potatoes- follow direction or use homemade mashed potatoes
    1 cup shredded mild cheddar cheese, or Mexican blend
    3/4 cup sour cream
    1/4 cup green onion  (chopped)
    1 teaspoon garlic salt
    1/2 teaspoon black pepper
    1/2 of 16 ounce bag frozen mixed vegetables

    Directions

    1.Place contents of banquet meal into a 10X6 Baking Dish. (best transferred frozen)

    2. Mix the sour cream, onions, cheese, garlic salt, black pepper with mashed potatoes in a large bowl.

    3. Pour mixed vegetables on top of Banquet Meal in 10X6 baking Pan. Next, spread mash potatoes on top of mixed vegetables and cook uncovered at 375 degrees oven on middle rack for 55-60 minutes.

    Optional: The entire meal can be cooked in the microwave. Times will vary depending on microwave watts.

    Kitchen Tips #6

    1. Use a few tablespoons of mash potatoes to thicken gravy instead of flour. This helps prevent lumps in gravy.

    2. If you don’t have capers use an equal amount of green olives chopped as a subsitiute.

    3. Don’t waste a whole lemon for just a few squeezes for a recipe. Poke a few holes with a fork in the lemon and squeeze what you need and refrigerate the lemon in a ziploc bag.

    4. Use a clean coffee filters to clean mirrors, chrome, windows, and auto windows. They leave behind very little lint.

    5. To help keep  sink drains moving, once a month  put 1/4 cup baking soda down drain first followed by 2 cups white vinegar let stand approx 1 hour or more. Then pour an entire sauce pan of boiling hot water down the sink.  This will help keep your drains smelling fresh and flowing well.

    Chicken and Noodles Slow Cooker Style

    Mama always says chicken soup was good for what ails you. Now you can make your own chicken and noodle soup, the easy way. Mama would be so proud.

    Preparation time: 15 minutes
    Cooking time: 3-4 hours
    Servings: 4-6
    Ingredients:
    4 chicken breasts, bite-size pieces
    2 (32 ounce) cartons chicken broth
    1 tablespoon chicken seasoning
    ½ medium yellow onion, chopped
    Salt to taste
    1 teaspoon black pepper
    1 (12 ounce) bag wide egg noodles
    2 tablespoons cornstarch
    Salt to taste

    Directions:
    1. Place chopped chicken into slow cooker with broth, chicken
    seasoning, onion, salt, and black pepper.
    2. Add egg noodles and cornstarch after chicken is fully cooked.
    stir well. Add additional water if needed. Cook until noodles are
    cooked.

    Tips:
    #1 Substitute bouillon cubes for chicken broth (1 cube to 1 cup
    of water)
    #2 Use store brand chicken broths to save money, but omit salt
    as store brands tend to be salty.
