Simple Salmon Patties
Ingredients:
1 tablespoon unsalted butter
1 (15 ounce) can salmon, discard bones, and reserve juices
2 large eggs
3 green onions, chop white and green parts
1/4 teaspoon baking powder
1/4 cup all-purpose flour
1/4 cup yellow corn meal
1/8 teaspoon sea salt or table salt
1/4 teaspoon black pepper
How To:
1. In a large non-stick skillet over medium heat add butter.
2. In a medium bowl combine all ingredients.
3. Drop tablespoons salmon mixture into hot butter, brown on each side 2 minutes, watch well burn easily.
Serves: 6-8
Tip: Goes great with simple baked beans, cottage cheese
