Monday: Tuna salad pita

3 tablespoons plain yogurt
3 tablespoons mayonnaise or miracle whip
1 (6 ounce) can tuna, in water drain
1 teaspoon lemon juice
1/4 teaspoon dill
Salt and pepper to taste
1 small tomato, diced
1/2 small cucumber, diced
Pita bread

1. Combine all above in medium bowl except pita.
2. Add 1/4 cup mixture into each pita
Sides-> potato chips, jell-o with strawberries

Tuesday: Basil Chicken
1/4 teaspoon salt
1 good pinch black pepper
4 teaspoons olive oil
1 teaspoon margarine
6 boneless skinless chicken breast or thighs
1 tablespoon balsamic vinegar
2 heaping tablespoons honey
3 teaspoons dried basil

1. Pat dry chicken breast and sprinkle with salt and black pepper.
2. Brown chicken in oil and margarine for 5-6 minutes on both sides.
3. In a small bowl, mix vinegar, honey and basil. Pour over chicken, and cook an additional 3-4 minutes or until chicken is no longer pink.
Sides-> broccoli and brown rice, strawberries and cool whip

Wednesday: Meatless Tacos
1 (15 ounce) can black beans, drained
1 (8 ounce) can tomato sauce
2 tablespoons red onion, diced
2 teaspoons taco seasoning
1 teaspoon hot sauce
Taco shells
Topping-> 1/2 cup radishes, cleaned and sliced, 1/4 cup shredded carrots, 1/2 cup Mexican cheese

1. Preheat oven to 350 degrees F.
2. In a large skillet over medium heat, cook first 5 ingredients for 10 minutes.
3. Meanwhile, place taco shells on cookie sheet and bake for 5 minutes.
4. Remove shells from oven and spoon ingredients from skillet into the shells.
Side-> ice cream

Thursday: ham with Mac and cheese
1 pound ham, bite size pieces and browned
1 package macaroni and cheese, prepare according to package directions
1 (15 ounce) can green beans, drained
1/4 cup pineapple, diced
3 tablespoons Italian bread crumbs
Salt and black pepper to taste

1. Mix all ingredients except bread crumbs in the same skillet as ham is fried with a little oil.
2. Warm together over low heat for 5 minutes. Sprinkle bread crumbs over mixture before serving.
Side-> Applesauce sprinkled with cinnamon

Friday: Freebie Friday or leftovers

Saturday: Crab Bagels
1 cup pre-cooked crab meat flakes
3 tablespoon celery with leaves, diced
2 tablespoon green onions, chopped
1/4 cup Colby jack cheese, shredded
1/2 cup miracle whip or mayonnaise
Bagels

1. In a medium bowl, mix all ingredients except bagels.
2. Spread mixture onto a lightly buttered bagel.
3. Place under broiler until lightly brown or hot.
Sides-> cold slaw and cookies

Sunday: Ground Beef Casserole
1 pound package tator tots
1 cup sour cream
1/4 cup beef broth
2 pounds ground beef, browned, broke up, and drained
1 cup cheddar cheese, shredded
1/4 cup shredded carrots
1/4 cup yellow onion, chopped
1 tablespoon dried parsley
1/4 teaspoon paprika
1/2 teaspoon chives
Salt and black pepper to taste

1. Preheat the oven to 350 degrees F.
2. In a large bowl, combine all ingredients. Pour into a large lightly greased pan.
3. Bake for 20 minutes on the middle rack of the oven.
Sides-> cottage cheese and fruit

A Penny Saved is Better than Penny Lost

Do you remember the days when you could buy a loaf of bread for fifty cents and a piece of gum for a penny? To save money on your groceries requires a little homework. I know, you are thinking I hate homework. Well this kind of homework can make you cents in your pocket instead of out of your pocket. Using coupons and the store ad to save you money does work. Let’s say your store has a sale of boneless chicken breasts once a month. You should buy your chicken once a month instead of waiting until you need the chicken breast. You will be surprised how much using SupermarketCoupons.com can fatten your wallet. Just last week I used a coupon to buy a couple packages of name brand hot dogs for a dollar a package. I could not buy one package for the price I paid for two packages. It just makes more cents to buy more when you have coupons and store ads to save you money. Some grocery stores are using a card that the cashier scans to save you money on your grocery shopping. Other stores are using the traditional coupons to save you money on your groceries at grocery store or online. It varies depending on what store you shopping at and where you live.

It’s Time to Run to the Store Again

Going to buy groceries for my recipes is one of my favorite things to do. I usually write a menu which I use to create my shopping list and I’ll add extras to the list if I need them. I try to pick up the items on the list only, but that’s not that easy. I’ll look for coupons online or in my local Sunday newspaper before heading to the store. But before I can leave I have to get cheap auto ins Arizona to protect my vehicle in case of an accident. Once I’ve got the car insurance I can drive to the grocery store with list in hand. I usually have my coupons I’m using in front of my coupon organizer. Once I get to the store I get a store ad to purchase sale items if I do not have one. I usually start with the produce department and get my meat or frozen food last. The cold food I’ll put in the thermal bags I purchased from the store to keep them from defrosting on the way home. I don’t put the cold groceries in the trunk; instead I’ll put them in the car to keep them cool.

A lot of people like to redo there kitchen and dining room, but they cannot afford to buy everything at one time. But it doesn’t have to be this way. You can redo them piece by piece. First, you can paint the kitchen from your pay check the first week then buy a new set of le creuset pans the next week. If you need to purchase a larger item for your kitchen you can put it on layaway or put the money aside each week until you have enough money to buy the item. I’ve done it this way in the past and it’s been an adventure for me. It’s nice seeing things transition in my kitchen and dining room. We need to buy a new pot rack and redo our kitchen cabinets as the paper is peeling off them. I’m not sure if we are going to paint or stain them, but we need to do it sooner rather than later. The problem is I need to leave the windows open to air the paint or stain out, but the weather will not cooperate.
