Sweet Potato Spinach Pizza

Most of the time pizza is made with cheese and pepperoni, but not this pizza. Sweet potatoes and spinach topped on mozzarella cheese.

Preparation time: 15-20 minutes
Cooking time: 30-35 minutes
Servings: 4-6

Ingredients:
Non stick spray
1 pre-made 12 inch pizza crust
1 medium sweet potato, peeled and thinly sliced
1 medium onion, thinly sliced
1 teaspoon sugar
2 teaspoons oil (your preference)
1/4 teaspoon black pepper
1 1/2 cups mozzarella cheese
1 (10 ounce) box spinach, thawed and excess water squeezed out
1 cup precooked, thinly sliced ham

Directions:
1. Follow directions on pre-made pizza crust package.
2. In medium bowl, combine sweet potato, onion, sugar, oil, and black pepper until well mixed.
3. Scatter 3/4 cup mozzarella cheese over crust. Top with spinach, sweet potato mixture, and ham, and scatter remaining cheese over pizza.
4. Place in oven on bottom rack, bake until sweet potato and onion is fork tender. (bake temperature is on crust packaging)

Tips
#1 refrigerated pizza crust can also be used
# 2 Spread pizza sauce on crust before cheese for added moisture.

Buttery Lima Bean Meatball Soup

When most people think of meatballs they think of Italian spaghetti and meatballs. For a change of pace theirs nothing better than a hot bowl of soup made with buttery lima beans and meatballs to warm you up from the inside out on a cold winter night.

Preparation: 15-20 minutes
Cooking Time: 2 1/2 hours
Servings: 2-4
1 pound ground beef
1 cup dry lima beans
1 bay leaf (remove after cooking)
1/4 cup onion, diced
1/4 cup carrots,diced
1/4 cup celery with leaves, diced
1/4 cup Italian style bread crumbs
1/2 teaspoon Worcestershire sauce
1/4 cup evaporated milk
1 beef bouillon cube
1/4 cup all-purpose flour
1 (15.5 ounce) can tomatoes, diced
Salt and pepper to taste

1. Preheat the oven to 350 degrees. Rinse lima beans and pour into the Dutch oven with 4 cups of water. Bring water to a rapid boil for 3 minutes; set aside for 1 hour.
2. In a small bowl, mix flour and 1/2 cup water; pour into Dutch oven with lima beans. Cook over medium heat until fork tender; stir in onion, bouillon cube, tomatoes,carrots, celery, salt, pepper, and bay leaf; bring to boil; set aside.
3. In a large bowl, combine with your hands ground beef, Italian style bread crumbs, evaporated milk, and Worcestershire sauce. Roll meat mixture into balls about the size of a quarter. Add to Dutch oven; cover and bake in oven for 1 hour or until meatballs are cooked; stir occasionally.

Simple Creamy Chicken Slow Cooker Recipe

A simple,delicious slow cooker recipe made with creamy chicken and egg noodles.

Preparation time: 10-15 minutes
Cooking time: Slow cooker-low for 6-9 hours or high for 3-4 hours
Servings: 4-6

4 cups chicken, cooked, diced
2 cans (4 ounces) mushrooms, drained
1 cup chicken broth
1 can (10.5 ounces) condensed cream of chicken soup
1 bag (12 ounces) egg noodles
1 tablespoon margarine/butter
3/4 cup onion, chopped
3/4 cup celery stalks with leaves, chopped
3/4 cup chopped green pepper
1 large bay leaf (remove after cooking)
1 cup large curd cottage cheese
2 jars pimiento (4 ounces)
Salt and pepper to taste

1. Boil egg noodles according to package directions cook until fork tender; drain egg noodles and grease slow cooker.

2. Pour egg noodles and condensed cream of mushroom soup into slow cooker; mix well. Add remaining ingredient to slow cooker one by one; stirring after each one.

3. Cook in slow cooker on low for 6-9 hours or high for 3-4 hours

Tip: Substitute turkey for chicken.
