Slow Roasted Corn Beef Cabbage Meal

I have prepared this recipe each year on New Years day. It is an easy to make one pot dish so you can enjoy the holiday and still have a great meal. In addition, you can have it any time of the year.

Prep 20 min
Cook 2 1/2 hours or until meat fork tender
Serves 6-8

Ingredients

1-corn beef brisket (3 lbs)
8 small potatoes; peeled (leave whole)
8 carrots; peeled (leave whole)
1 large head cabbage; remove outer leaves and cut into 4 wedges
1 pkg dry onion soup mix
6 tsp beef bouillon or 4 cubes
Water enough to cover corn beef brisket in a deep pan
2 tsp salt or to taste

Directions

1. Preheat oven 325 degrees
2. Place corn beef into center of pan fat side up, next arrange potatoes, carrots, and cabbage around brisket.
3. Sprinkle spice packet,salt and dry onion soup over contents in pan. Next, pour water into pan covering brisket.
4. Cover with aluminum foil tightly around edges, place in oven at 325 degrees and bake 2 1/2 hours or until fork tender.

Sizzling Sausage Skillet Meal

A easy to make sausage skillet meal that anyone can make. Its one of those meals that you can easily make quickly when you don’t have much time to cook, but don’t want fast food.

Prep 5-7 min

Cook 15 min

Serves 4

Ingredients

1 lb pork sausage

1 1/2 cups white rice

1-large onion (chopped)

4 tablespoons parsley

1 pinch red pepper flakes

1/2 teaspoon sage

Salt to taste

3/4 cup water

3/4 cup shredded carrots

2/3 cup celery, chopped

Directions

1. Cook rice according to package instructions, drain and set aside.

2. Cook sausage in a large skillet; making sure, you break up the sausage as it browns. Remove from skillet. (drain if excessive amount of grease)

3. Now cook onion, celery, carrots, water, salt, sage and, red pepper flakes in the skillet. Bring to a rapid boil and then cook on simmer for 5 minutes.

4. Lastly, return cooked rice and sausage into skillet and mix well.

Paradise Pork Roast

Michael from a family Man asked a recipe question:   How can I cook a pork roast in the oven? Got any recipes for pork roast? I’m the cook in the house but I’m the husband, not the wife. Hehehehehe yes, its true.

Ms Recipe: Michael, here is an answer to your question.

Now Ms Recipe is sending you all of to the islands for this delicious pork roast from her family recipe book. Therefore, you all have orders to get your swim gear on and sail into the sunset, but do not forget to come back for more recipes.

Prep: 25 min

Cook time: 2 hours or until meat thermometer reaches 160 degrees.

Serves: 6

Ingredients

2 1/2 lbs pork roast

3 tablespoons of honey

3 tablespoons of pineapple juice or orange juice

1 1/2 tablespoons of soy sauce

2 teaspoons lemon juice

6 cloves garlic (peeled)

1/2 teaspoon nutmeg

1/4 teaspoon paprika

1/4 cup ketchup

3 tablespoons olive oil

Salt and pepper to taste

Directions:

1. Preheat oven 325 degrees

2. Pour olive oil into skillet and brown roast on all sides for 5 minutes.

3. Remove from skillet and cut six slits into pork roast. Put one garlic clove into each slit and place roast into a baking pan or dish.

4. In a medium bowl mix together ketchup, pineapple juice or orange juice, honey, soy sauce, lemon juice together. Pour mixture over pork roast. Next, sprinkle nutmeg and paprika over pork roast.Bake for 2 hours at 325 degrees.

5. Let stand 5 min before serving.

Tip: Mix together 2 tablespoons cold water and 1 1/2 teaspoons cornstarch in a small bowl and set aside. Pour drippings into a small saucepan and bring to a low boil. Then pour in cornstarch mixture and bring to a rapid boil until desired thickness. Pour over Pork roast and serve.

Salmon Patty Cakes

Having problems using that last can of salmon in the pantry? These simple and economically priced salmon cakes are so good even that person that does not like fish will be asking for seconds. These would be great with Mouth Watering Sweet Potatoes

Cook 10 min
Serves 3

Ingredients

2 cans of salmon (remove skin, bones, and, drain)
2 large eggs
1/4 cup dry onions or fresh (cut finely)
1-teaspoon parsley
20 saltine crackers (smashed)
Salt and pepper to taste
3 tablespoons olive oil or vegetable oil
2 tablespoons of margarine or butter

Directions

1. Mix salmon, eggs, and onion, and parsley, crackers together in a bowl. Form into patties.
2. In large skillet place olive oil, margarine, make sure hot before putting place in.
3. Cook until golden browned on both sides with a lid on them.

Tip: You can use two cans of tuna instead of salmon.

Tantalizing Honey Chicken

This chicken has a little bit of sweet and a whole lot of tang to it. It is appealing to even the fussiest eater in your house. It is a great meal for that date night when you want to stay home, but enjoy a great meal at low price. .

Prep 10 min   marinating time 4 hours to overnight.
Cook 40 min
Servings 6

Ingredients
6 chicken leg quarters or chicken breast (remove skin if you like)
2 cups honey
3/4 cup lemon juice
3/4 cup soy sauce
2 Tablespoons garlic powder

Directions:
1. Preheat oven to 400-degrees.spray bottom of baking pan with non-stick spray.

2. Mix all ingredients with chicken in a large Ziploc bag. Next, Place in refrigerator for 4 to 24 hour hours to marinate chicken. Turn the bag of chicken over occasionally to allow chicken to coat well.

3. Refrigerate leftover marinate until later. Bake chicken for 40 minutes turning after 20 minutes or until chicken is cooked.
4. Place remaining marinade into a small saucepan, bringing to a rapid boil, then turn down to low heat for at least 5 minutes. Keep the sauce warm until served.
5. Serve chicken with sauce drizzled over top.

Tip: You can use pork chops instead of chicken
