Ask Ms Recipe’s Chicken Salad

I really like to make this for lunch or a light dinner with soup. My soup of choice is bean and bacon or vegetable. Of course you can use any kind of soup.

Prep 20 min

Cook 60 min

Serves 4-6

Ingredients

5 chicken leg quarters

4 large eggs

1/2 large onion (chopped)

4 tablespoons of mayonnaise or miracle whip

1-tablespoon seasoned salt

1-teaspoon black pepper

6 celery stalks with leaves

10 dill pickles (chopped) or sweet relish

1/2 tablespoon garlic powder

Directions

1. Boil eggs until hard-boiled. Place chicken into a large saucepan and cook for 1 hour on medium heat until fully cooked.

2. Chop up chicken, eggs, celery, pickles, and onions. Put all ingredients including spices into a large bowl and mix well.

3. Now add mayonnaise and mix well again, if seems a little dry add extra mayonnaise.

Tip

I used a food processor to chop up all ingredients. If you want to chop it up by hand more power to you lol :). If you use a food processor, it will make the chicken salad very fine.

Nutty Apricot Crock-pot Chicken

This simple chicken recipe is made with or without the nuts. Most people now days love to come home to a home cooked meal, but do not have the time to prepare one. A wild rice would be a real compliment to this delicious recipe, so enjoy.

Prep: 25 min

Cook: 4 hours on high, 6 on low

Servings: 4

Ingredients:

4 chicken breast or leg quarters

1 cup apricots (drained and chopped up)

2 1/2 cups chicken broth

2 teaspoon tomato paste

2 1/2 teaspoons garlic powder

4 teaspoons lemon juice

1 cup raisins

1 teaspoon salt

3/4 teaspoon pepper

2 tablespoons flour

1 1/4 teaspoon cumin

1 1/2 teaspoon ginger

1 1/2 teaspoon cinnamon

3 medium onions sliced

2 tablespoons pine nuts (optional)

Directions

1. Put chicken, onions, apricots, pine nuts and raisins in a large crock-pot.

2. In a bowl mix together lemon juice, broth, tomato paste, flour, pepper, salt, cinnamon, ginger, and cumin.

3. Pour broth and spice mixture over chicken in crock-pot. Cook on low for 6 hours or high 4 hours.

Optional: Use peanuts or cashews instead of pine nuts.

Double Identity Vegetable Crockpot Soup

Okay, okay it is hard to believe that fall is upon us and soon it will be winter. It is time to warm up your insides so that your outsides are toasty warm. So enjoy the great soup that can be spicy depending on how much soul season you add.

Prep 20 min

Cook 4 hours low or 2 hours high

Serves 6 or more


Ingredients

3 cans of vegetable, chicken, or beef broth

2 tablespoons Italian Seasoning

1-tablespoon rosemary (dried)

1 tablespoon soul seasoning (adjust to taste)-

2 1/2 tablespoons minced garlic

Pepper and salt (adjust to taste)

2 zucchini (chopped)

3 carrots (chopped)

2 yellow squash

1 small head of cabbage (chopped)

1-cup mushrooms (sliced)

1 1/2 cups cauliflower (chopped)

1 1/2 cups broccoli (chopped)

1 (8ounce can tomato sauce)

1 med onion (chopped) you add if you want


Directions

1. Clean and chop up all the vegetables.

2. Pour all the ingredients into the crock-pot and mix all ingredients well.

3. Cook on low for 4 hours, or on high 2 hours in crock-pot. Time may vary depending on crock-pot.


Tip: You can freeze soup for up to one month.


Optional: You can add 2 chicken breasts or 2 pounds beef cut up. Add 1 hour cook time if using meat.

Jerky Chicken

The name says it all with this chicken. You put it in your mouth and you have an explosion of flavors. This chicken is not for someone who does not like some heat in his or her food.

Prep 10 min

Cook 20 min

Serves 6

Ingredients

6 chicken breasts

2 teaspoons thyme

1-teaspoon salt

1 1/2 teaspoon sugar

2 teaspoons garlic powder

1/2 teaspoon crushed red pepper flakes

1-teaspoon cinnamon

1-teaspoon soul seasoning

1/4 teaspoon pepper

1/2 teaspoon parsley

Directions:

1. Preheat oven to 400 degrees

2. Mix together in a zip lock bag cinnamon, soul seasoning, red pepper flakes, garlic powder, sugar, salt, thyme, black pepper, and parsley. Next, add chicken mix well, until coated.

3. Place on lightly greased cookie sheet and bake for 20 min, turning after 10 min

Tantalizing Honey Chicken

This chicken has a little bit of sweet and a whole lot of tang to it. It is appealing to even the fussiest eater in your house. It is a great meal for that date night when you want to stay home, but enjoy a great meal at low price. .

Prep 10 min   marinating time 4 hours to overnight.
Cook 40 min
Servings 6

Ingredients
6 chicken leg quarters or chicken breast (remove skin if you like)
2 cups honey
3/4 cup lemon juice
3/4 cup soy sauce
2 Tablespoons garlic powder

Directions:
1. Preheat oven to 400-degrees.spray bottom of baking pan with non-stick spray.

2. Mix all ingredients with chicken in a large Ziploc bag. Next, Place in refrigerator for 4 to 24 hour hours to marinate chicken. Turn the bag of chicken over occasionally to allow chicken to coat well.

3. Refrigerate leftover marinate until later. Bake chicken for 40 minutes turning after 20 minutes or until chicken is cooked.
4. Place remaining marinade into a small saucepan, bringing to a rapid boil, then turn down to low heat for at least 5 minutes. Keep the sauce warm until served.
5. Serve chicken with sauce drizzled over top.

Tip: You can use pork chops instead of chicken
