Summer is a special time of year, especially after a long winter and rainy spring. Watching vegetables grow is the highlight of the season. Another highlight of the season is making frugal salads from fresh produce.

3-4 fresh basil leaves
2 cups elbow macaroni
2 pounds ground beef
1-2 tablespoons canola oil (add if ground beef is dry)
2 medium-large burpless cucumbers, sliced
5- 10 roma tomatoes, diced
Bottle of ranch salad dressing
Fresh Chives

1. Cook elbow macaroni with basil leaves according to package directions. Set Aside.
2. Cut peeled cucumbers horizontal into fourths and then cut into bite size pieces.
3. In a large skillet, brown ground beef with a little canola oil, if needed.
4. Drain ground beef and salt and pepper to taste.
5. Mix cucumbers with drained ground beef.
6. Stir diced tomatoes with cucumber mixture.
7. Slowly add elbow macaroni to mixture; stir frequently
8. Add desired amount of ranch dressing to cucumber/ground beef mixture. Refrigerate for at least thirty minutes and serve.

9. Top with fresh chives.

Being a food experimenter has become on of my favorite things to do since I was a little girl. Recently, I was given an oppurtunity to try Zipsauce. Talk about speedy shipping, I received the Zipsauce within a couple of days. It arrived wrapped in bubble wrap to protect it from breaking. Along with two bottles of zip sauce I received several cards with recipes already made with Zipsauce. I decided to make a meatloaf with the sauce, but not your ordinary meatloaf. At first, I thought the sauce smelled like soy sauce, but once I tried the sauce I was surprised how good it did really tastes.
