Curry Chicken Salad Recipe
1 +1/2 tablespoons extra virgin olive oil
1 pound chicken strips
1 small red onion, peeled and roughly chopped
1 teaspoon curry powder
1 small box golden raisins
1 teaspoon dried cilantro
1 small gala apple, cored and diced
1 large green onion, cut tops off and slice thinly
2 + 1/2 teaspoon mayonnaise
1. In a small skillet over medium-low heat warm oil then add chicken strips; turn often. Cook for about 5 minutes then sprinkle with salt and pepper cook until brown and no longer pink. Remove from skillet and place on a platter.
2. Add half of red onion. Cook for 2 minutes until soft. Next add curry powder and cook for a few minutes stirring often and set aside.
3. Add raisins to pan drippings, remove from heat add half of mayo, remaining onion; mix well. Refrigerate until ready to make salad.
4. When ready to eat mix salad mixture with chicken and remaining onion and mayo.
Side Suggestions: Pita bread, applesauce and dessert.
