Cheesy Hamburger Biscuit Casserole
1 pound ground beef
1/2 large green pepper, seeded and chopped
1/2 large yellow onion, peeled and chopped
1 medium yellow squash, sliced
1/2 cup tomato sauce
1/4 cup plain bread crumbs
1/2 teaspoon seasoned salt
2 large eggs, beaten
4 tablespoons 2 % milk
2 cups shredded cheddar cheese
1 tablespoon Worcestershire sauce
1/4 teaspoon ground black pepper
3 tablespoons cocktail sauce
1 (7.5 ounce) can refrigerated buttermilk biscuits
1. Preheat the oven to 400 degrees F.
2. In a large skillet over medium heat, crumble ground beef and sauté 2 minutes.
3. Add green pepper, onion, squash, continue to sauté’ until onions are soft, about 5 minutes. Spoon into lightly greased, large baking dish.
4. In a medium bowl, mix together tomato sauce, bread crumbs, seasoned salt, eggs, milk, cheese, Worcestershire sauce, black pepper, and cocktail sauce. Spread mixture over ground beef, top with biscuits two in each row. Bake on middle shelf for 10-15 minutes or until biscuits are light brown.
