Dry Ingredients
2 1/2 cups all-purpose flour
3/4 salt
4 teaspoons baking powder
Wet Ingredients
3 tablespoons soft margarine
3 cups eggnog
2 large eggs
Directions:
1. In large bowl sift dry ingredients together.
2. Using a small bowl, whisk margarine, eggnog, and eggs together.
3. Pour 1/4 cup of batter into a lightly greased hot skillet. Cook a few minutes on each side or until golden brown and bubbling on top.
Optional: Preheat oven on a low setting and place serving platter on the top rack. Place pancakes when cooked on platter to to keep warm.
Caution: Tell everyone that the plate is hot to prevent burns and potholder or tea towel on platter as a visual reminder.
