Harvest Pumpkin Soup
Enjoy a delicious bowl of pumpkin soup made with fresh pumpkin.
2 tablespoons unsalted butter
1/2 cup green pepper, chopped
2 tablespoons red onion, chopped
1 medium bay leaf
1 pinch thyme leaves
1 teaspoon parsley
2 cups cold water
2 cups mashed pumpkin, cooked
1 (14 ounce) can diced tomatoes
2 chicken bouillon cubes
1 tablespoon all-purpose flour
2 cups 2% milk
1/4 teaspoon sea salt
1/4 teaspoon hot sauce
1. In a large skillet over medium-low heat melt butter.
2. Add green pepper, onion, bay leaf, thyme, parsley, water, pumpkin, tomatoes, and bouillon cubes into skillet with melted butter. Bring to a boil then simmer for 25 minutes; stir occasionally.
3. In a small mixing bowl, combine flour, milk, salt, and hot sauce; blend well.
4. Stir into soup; simmer over medium heat, stirring frequently until mixture boils.
