Sometimes, even Ms Recipe has a hard time creating side dishes. Kidney bean salad is one of those side dishes that is not only inexpensive, but can be used as a entree for vegetarians. I like to make this side dish with a yummy tuna salad sandwich.
Preparation time: 5-10 minutes
Cooking time: None
Ingredients:
1 (15 ounce) can red kidney beans, drained
2 large hard-boiled eggs, chopped
½ large yellow onion, diced
10 pickles or 2 tablespoons pickle relish (dill or sweet), chopped
½ teaspoon garlic powder
¼ teaspoon black pepper
1 tablespoon dried parsley flakes
½ teaspoon seasoned salt
2 tablespoons mayonnaise or miracle whip
Directions:
1. Combine all ingredients in a medium bowl and mix well.
Refrigerate for 1 hour before serving.
Tips:
#1 Substitute black beans for kidney beans.
