Kidney Bean Salad

 

Sometimes, even Ms Recipe has a hard time creating side dishes. Kidney bean salad is one of those side dishes that is not only inexpensive, but can be used as a entree for vegetarians. I like to make this side dish with a yummy tuna salad sandwich.
Preparation time: 5-10 minutes
Cooking time: None

Ingredients:
1 (15 ounce) can red kidney beans, drained
2 large hard-boiled eggs, chopped
½ large yellow onion, diced
10 pickles or 2 tablespoons pickle relish (dill or sweet), chopped
½ teaspoon garlic powder
¼ teaspoon black pepper
1 tablespoon dried parsley flakes
½ teaspoon seasoned salt
2 tablespoons mayonnaise or miracle whip
Directions:
1. Combine all ingredients in a medium bowl and mix well.
Refrigerate for 1 hour before serving.
Tips:
#1 Substitute black beans for kidney beans.

    I think this is a really tasty recipe. Its very budget friendly. Its very well liked so I have to double the amount to satisfy my family. Its one of those side dishes that’s not your typical meat, vegetable, and potatoes. It something different. Try it and let me know how you like it.
