Tortillas are a one of my favorite alternatives to bread so I decided to try them with breakfast food this time. Check out my other Vegetarian Recipes.
Cooking time: 45 minutes
Serves: 3-4 people
Ingredients:
6 tortillas
mild salsa
10 eggs
6 mini red, yellow, orange bell peppers (rinsed and chopped)
6 ounces monterey jack cheese (shredded)
2 green onion (remove ends and chop)
1/2 teaspoon seasalt
1/8 teaspoon pepper
How to:
1. Preheat the oven to 350 degrees F.
2. Place tortillas on a lightly oiled cookie sheet overlapping each other.
3. Spread a thin layer of salsa on to the tortillas.
4. In a large bowl, whisk eggs, bell peppers, green onions, salt and pepper together.
5. Pour the mixture into the 13×9 pan and cook for 45 minutes.
6. Use a toothpick doness.
