So I’m in the mood for experimenting with different foods or recipes. Up first is cauliflower in a flour tortilla made with a whole lot of spices. Would I miss the meat? Strangely enough the combination of flavors caused a confetti of flavors in my mouth. I’ll have to say the spices did the trick. I didn’t miss the meat at all. Do you prepare any recipes that you don’t miss the meat?
Ingredients:
1 head cauliflower, cut into bite size pieces
3 tablespoons olive oil
1 large yellow or red onion, chopped
2 tablespoons paprika
1/2 teaspoon sea salt
2 teaspoons lemon pepper
1 teaspoon garlic powder
3/4 teaspoon vegetable broth powder with 1/2 cup hot water
6 flour tortilla
How to:
1. Bring large pot of water to boil then place cauliflower into steamer pot and place on top of boiling pan. Cover and steam cauliflower until fork tender.
2. In a large skillet, heat oil on medium heat then add onion, paprika, sea salt, lemon pepper and garlic while stirring continuously. Cook for 3-4 minutes.
3. Add prepared broth and cauliflower. Mix well and simmer for 4-5 minutes.
4. Warm tortilla for 30 seconds. Spoon cauliflower mixture into tortilla and wrap up.
- Serves 3 (2 tortilla wraps each.)
Tip:
Serve with buttered green beans and fresh fruit.
