About the President of DedMed’s Gourmet Spices
Mediterranean cuisine specialist Denise Hazime acquired a love of cooking at a very young age. Growing up in a large Lebanese family steeped in culinary tradition, she was exposed early on to a wide range of cooking techniques from her mother, who taught her the essentials for preparing all types of Mediterranean dishes. As a child, if she wasn’t in the kitchen helping her mother cook, she was in front of the TV watching Julia Child and Jeff Smith on the Frugal Gourmet.
Kafta Kabob- A great alternative to burgers, do something great with ground beef or ground chicken. This seasoning gives ground meat a great flavor that alleviates the plain old buger. Mix the meat with spices, chopped onions and chopped parsley and cook on the grill, on a stove top pan or in the oven.
6 boneless chicken breasts
Kafta Kabob Seasoning
1 large purple onion, cut into rings
4 baking potatoes, peeled and quartered
Salt and Pepper to taste
1. Rinse chicken breasts and pat dry.
2. Place chicken on large greased baking dish.
3. Arrange potatoes around the chicken and lay onion on top.
4. Salt and pepper to taste.
5. Bake covered with foil for 30 minutes.
6. Sprinkle lightly with Kafta Kabob seasoning.
7. Bake uncovered for an additional 20 minutes or until juices run clear when poked.
Tip #1: Serve with your favorite veggies.
Tip #2: When you make hamburger patties sprinkle Kafta Kabob seasoning on hamburgers after turning for the last time.
My Thoughts:
The spice was one I don’t usually cook with, but I was willing to try out the spice in one of my recipes. I was surprised how good the chicken turned out. It’s great on hamburgers too. The lid to the bottle rotates to decide how much of the spice you would like to use. `

I want to try the Middle Eastern Zaatar Spice, I have been to a Lebanese restaurant here in town and like some of their spices, this is one I know they use.
