Honey Meat Loaf
Cooking time
Serves 4-6

Ingredients
2 pounds lean ground beef
1/2 cup plain bread crumbs
1/2 cup Honey barbecue sauce
1/4 cup yellow onion, peeled, chopped
1/4 teaspoon Italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon white pepper
2 large egg whites
Directions
1. Preheat the oven to 375 degrees F.
2. In a large bowl mix together ground beef, bread crumbs, 1/4 cup honey barbecue sauce, onion, Italian seasonings, salt, pepper, egg whites.
3. Transfer mixture into long baking dish, shape into loaf, and spread remaining barbecue sauce over meatloaf.
4. Bake uncovered on middle rack oven for 30 minutes, place a pan of water on bottom rack under meat loaf.

Pineapple Smoked Sausage
Cooking time 23 minute
Serves 4-6
Ingredients
3 tablespoons unsalted butter
1 medium tomato, chopped
1 medium green pepper, finely chopped
1 large yellow onion, peeled, chopped
1 1/4 cups pineapple tidbits, drained, reserve juice
2 tablespoons cornstarch
2 tablespoons white vinegar
1/2 cup pineapple juice
1 pound smoked sausage cut into 2 inch chunks
1/2 teaspoon dried thyme
Salt and pepper to taste

Directions:
1. In a large non-stick skillet over medium heat melt butter, add tomato, green pepper, onion, and pineapple tidbits, mix well, and cook for 8 minutes.
2. Meanwhile stir cornstarch, vinegar, and pineapple juice together in a small bowl. Pour into skillet with vegetable mixture, and stir.
3. Add smoked sausage, thyme, salt and pepper. Cover and bake for 15 minutes, stirring often.

Tip #1 If needed add hot water or pineapple juice a little at time.

Sides> white or brown rice, Hot chocolate

Lettuce Pray Soup
Cooking time 10 minutes
Serves 4-6

Ingredients:
3 tablespoons unsalted butter
1/2 cup green onions white and green, diced
1 medium head lettuce, shredded
1 cup chicken broth
2 tablespoon imitation bacon bits
1/4 teaspoon dried mint
1 teaspoon dried curry
1 cup half & half

Directions:
1. In a large saucepan over medium heat, melt butter, add green onions, and sauté until soft.
2. Add lettuce, chicken broth, bacon bits, mint, and curry; stir, cover and simmer for 5 minutes or until lettuce is soft.
3. Carefully spoon into a food processor or blender. (Contents will be very hot.) Process to baby food texture, and return to saucepan.
4. Bring to boil, adjust seasonings (taste) add half & half serve hot.

Sides> Bread and butter and sugar cookies

Diet Baked Chicken
Cooking time 45 minutes
Serves 4-6

Ingredients:
Olive oil cooking spray
6 skinless, boneless, chicken breast or thighs
1 small tomato, squeeze seeds out, chop
1 cup reduced fat mozzarella cheese, shredded
1 (15 ounce) can sugar free tomato sauce or fat free
1/2 teaspoon Italian seasoning
1/4 teaspoon season salt
1/4 teaspoon red pepper flakes
1 tablespoon all-purpose flour
2 packets splenda
1/4 cup button mushrooms, chopped

Directions:

1. Preheat the oven to 350 degrees F.
2. Spray a medium baking dish with olive oil, lightly.
3. Place chicken into baking dish, single layer, sprinkle tomato, and cheese evenly.
4. In a small bowl stir together tomato sauce, Italian seasoning, season salt, pepper flakes, flour, splenda, and mushrooms. Pour sauce mixture over cheese.
5. Cover and bake on middle rack in oven for 35 minutes. Uncover and continue baking another 10 minutes or until chicken runs clear when cut. Uncover let stand 5 minutes before serving.

Sides> Mashed potatoes, carrots

Freebie Friday or leftovers

Bean and Corn chili
Cooking time 4-6 hours on low
Serves 6-8

Ingredients
1 cup frozen whole kernel corn
1 (15 ounce) can black-eyed peas
1 (15 ounce) can navy beans
1 large yellow onion, peeled, chopped
1 small clove garlic, minced
1 (4 ounce) can tomato paste
1 cup diced tomatoes
2 tablespoons hot sauce or to taste
1 cup water
2 teaspoons chili powder
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1 teaspoon dried mustard
1 cup cheddar cheese, shredded

Directions
1. Stir all ingredients above together into a large slow cooker; cover and cook on low 6-8 hours.
2. Sprinkle cheese across chili 1/2 hour before serving.

Stuffed Steak
Cooking time 60 minutes
Serves 4-6

Ingredients
1 (3-4) pound tenderized round steak
1 Box Beef stove top stuffing
1 small apple, cored, sliced
1 small yellow onion, peeled, diced
1/2 teaspoon black pepper
2 tablespoons canola oil
1/4 cup beef broth

Directions:
1. Make stuffing according to directions on box.
2. Meanwhile trim off excess fat around edges, sprinkle pepper on it.
3. Spread stuffing over steak, lay apples on stuffing, and sprinkle onions across apples, start on horizontal side steak roll up loosely (like a jelly roll) use kitchen twin tie securely in 3 or 4 places.
4. Preheat the oven to 375 degrees F.
5. In large non-stick pan, add canola oil over medium heat, warm, brown steak on all sides. If pan is oven proof leave in pan, add beef broth, cover. (If not place in large baking pan/dish)
6. Bake on middle rack oven for 30-40 minutes, cut and check, meat thermometer 145 F.
