It’s hard to believe that a year is almost past us again. I cannot believe that 2010 is almost gone. I just started putting up my Christmas tree this week. Actually, we’ve put the lights on the tree already, but haven’t got around to putting the ornaments on it. It’s a pre-lit tree that we had to put our own lights around it because part it will not light up. This year I’m going to try to put some lights outside, but the weather is not cooperating with me.

Food seems to be a theme for the holiday season. Children are building gingerbread houses some from scratch and others from a kit. Families are baking and decorating cookies. Most are busy preparing for this year’s meal if you’re cooking.

What are your holiday plans? Does your family go to someone’s house or do you stay home? Do you enjoy the snow that comes with living in a season changing part of the world?

I may not be a baker, but I love Potato Chip Cookies…… and I’m going to share, but you’ll have to make your own….

Ingredients:
1 cup white sugar
2 large eggs
1 cup Crisco shortening
1/2 cup brown sugar

2 cups all-purpose flour

1/2 teaspoon vanilla

1/4 cup chopped pecans

1 pinch black pepper
1 tsp baking soda

1 cup plain potato chips, crushed

flour ( read directions)

Directions:

1. Preheat the oven to 350 degrees
2. In a large bowl, mix white sugar, eggs, Crisco shortening, and brown sugar.
3. Add and stir in flour, vanilla, black pepper, pecans, and baking soda.
4. Drop spoonfuls onto a lightly greased cookie sheet. Flatten with fork dusted with flour.
5. Place cookie sheet on middle rack in the oven and cook for 10-15 minutes (check occasionally as ovens vary.)

A Little Holiday Dipping

Ginger Dip

1 cup low-fat mayonnaise
1 tablespoon soy sauce
1 teaspoon ground ginger
2 tablespoons green onion, diced (green and white part)

Directions:

Pour all ingredients into sealed container. Serve with chips, crackers, or your favorite veggies. (makes 1 cup)

Oriental Dip

1 cup sour cream
1 cup low-fat mayonnaise
3 teaspoons yellow onion, diced
1 tablespoon dried parsley
1 Pinch Sea or kosher salt
1/4 teaspoon garlic powder
1/2 teaspoon soy sauce
1/2 teaspoon Worcestershire sauce
1 (8 ounces) can water chestnut, drain and chop

Directions:

Pour all ingredients into sealed container. Serve with chips, crackers, or your favorite veggies. (Makes 2 cups)

Tips… Tips… and More Tips….

Tip #1:

Smell potatoes before buying them. If they smell earthy they are old most of the time.

Tip #2:

If bag of potatoes has condensation on it then it may have been refrigerated or frozen.
