Monday- Ground beef Stew
Serves 2-4
Cooking time 4-6 on low or 1-2 1/2 on high
2 pounds lean ground beef
1 can diced tomato, do not drain
1 medium yellow onion, peeled and chopped
1 large carrot, diced
1 stalk celery with leaves, chopped
2 medium-large baking potato, cut bite-size
2 cups water
1 package brown gravy mix
1/2 teaspoon basil
1 tablespoon kosher salt
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 small bay leaf
Directions
1. In a large non-stick skillet, brown ground beef until no longer pink.
2. In a large slow cooker, add tomato, onion, carrot, celery, potato, water, gravy mix, basil, salt, pepper, Worcestershire sauce, bay leaf, and ground beef.
3. Cover and cook on low for 4-6 hours or high 1-2 1/2 hours.
Sides> corn bread, cottage cheese
Tuesday- Sloppy Turkey Sandwich
Serves 4-6
Cooking time 15 minutes
2 pounds ground turkey
1 teaspoon olive oil
2 tablespoons minced onion
1 medium green pepper, chopped
1/2 teaspoon paprika
1 pinch red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon oregano
2 cups tomato sauce
2 1/2 teaspoons dark brown sugar
6 hamburger rolls
Directions
1. In a large non-stick skillet over medium heat warm olive oil, add turkey, onion, and green onions, and green pepper until onion is translucent and turkey is browned.
2. In a small mixing bowl, combine paprika, salt, red pepper flakes, garlic, oregano, and brown sugar. Stir into meat mixture.
3. Add tomato sauce and cook over low heat 10-15 minutes.
Sides> scalloped potatoes
Wednesday- Broccoli and sweet potato casserole
Serves 4-6
Cooking time 30-40 minutes
2 large size sweet potatoes, peeled, sliced to 1/4 inch disks
1 cup broccoli florets (unthawed)
1 cup yellow onion, peeled and chopped
1 small green and red peppers, seeded and cut into bite-sized pieces
1/2 teaspoon minced garlic
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
1/4 cup light brown sugar
1 teaspoon dried parsley
1/2 cup unsweetened orange juice
1 tablespoon soy sauce
1 teaspoon instant tapioca granules (thickener)
Directions
1. Preheat the oven to 400 degrees F.
2. In a 2-3 qt baking dish, lightly grease. Add first 4 ingredients.
3. In a medium bowl combine garlic, salt, pepper flakes, brown sugar, parsley, orange juice, tapioca, and soy sauce, stir well. Stir into baking dish with first 4 ingredients.
4. Cover and cook for 30-40 minutes on the middle rack or until sweet potatoes are done.
Thursday- Simple potato soup
Serves 4-6
Cooking time 20-30 minutes
4 large potatoes, peeled and chopped into bite-sized pieces
1 medium yellow onion, peeled and chopped
2 large stalks celery with leaves, chopped
2 cups chicken broth
1 cup water
2 tablespoons unsalted butter
1/2 teaspoon black pepper
2 cups whole milk
Directions
1. In a large saucepan over low-medium heat, add potatoes, onion, celery, chicken broth, and enough water to barely cover vegetables. Add 1 tablespoon butter then cover and cook for about 10-15 minutes or until fork tender.
2. Next add remaining butter, pepper, and milk. Warm up for additional 10-15 minutes over low heat. Cover and stir often. (Watch closely)
Sides> grilled ham and cheese or crackers
Friday- freebie Friday or Leftovers
Saturday- Coke chicken
Serves 2-4
Cooking time 1 hour
4 chicken breast or thighs, skin and boneless
1 (10.5 ounce) can cream mushroom soup
4 green onions, chopped, white and green parts
2 teaspoons dried parsley
1 teaspoon black pepper
3/4 cup coke cola (let set out 1/2 hour before using)
Directions
1. Preheat the oven to 350 degrees F.
2. In a baking dish place chicken in 1 layer.
3. In a medium mixing bowl, stir together cream mushroom soup, onion, parsley, salt, pepper, and coke cola.
4. Spoon soup mixture over the chicken and cover.
5. Bake on the middle rack for 1 1/2 hours or until chicken juices run clear.
Sides> Baked beans
