Monday:
Serves: 4-6
Lentil Ham Salad
2 cups chicken broth
2 cups water
1 cup brown lentils
2 cups cooked ham
½ cup Italian dressing and herbs
¼ cup red onions, chopped
1 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons parsley
Directions:
1. In a large saucepan over medium heat, add water, broth and lentils. Cover and bring to a boil. Reduce heat and simmer for 5 minutes.
2. Remove from heat and let stand for 2 hours.
3. Drain lentils, then mix in ham, salad dressing, onion, salt and pepper in large bowl. Sprinkle with parsley.
Tuesday:
Serves: 4-6
Cool Cucumber Salad
1 can (10.5 ounce) can cream of celery soup
2 small cucumbers, peeled and chopped
3 teaspoons dried parsley
2 green onions, chopped
1 cup whole milk
1 teaspoon kosher salt
½ teaspoon black pepper
Directions:
1. Add all ingredients except milk to food processer
2. Pour ingredients into bowl and mix with milk. Refrigerate for at least 1 hour. Sprinkle with paprika prior to serving.
Sides -> tomato and cucumber sandwich with margarine and jell-o
Wednesday:
Serves 1-2
Brown Rice Casserole
1 cup cooked brown rice
2 large egg yolks
¾ cup half-n-half
1 tablespoon margarine
½ teaspoon kosher salt
1 pinch black pepper
Directions:
1. Preheat the oven to 325 degrees F.
2. In a large bowl, stir together rice, egg yolks, margarine, half-n-half, salt and cheese.
3. Spoon into lightly greased baking dish and sprinkle with cheese
3. Bake in the oven on the bottom rack for 30 minutes or until cheese is golden brown.
Sides-> carrots and cucumber salad and applesauce.
Thursday:
Tomato Puree Patties
1 pound ground beef
1 large egg
2 green onions, white and green part
3 tablespoons tomato puree
2 tablespoons all-purpose flour
2 teaspoon kosher salt
1 teaspoon hot sauce
½ cup crackers, finely crushed
1. In a large bowl, combine all ingredients and form into hamburger patties.
2. In a large skillet, add patties into hot skillet and cook until brown on both sides.
Sides-> pea salad and French fries
Friday:

Sides-> Mashed potatoes and French style green beans
Sunday:
Oh No It’s Tofu Spinach Lasagna
Sides-> herbed garlic bread and tossed salad
