3 tablespoons plain yogurt
3 tablespoons mayonnaise or miracle whip
1 (6 ounce) can tuna, in water drain
1 teaspoon lemon juice
1/4 teaspoon dill
Salt and pepper to taste
1 small tomato, diced
1/2 small cucumber, diced
Pita bread
1. Combine all above in medium bowl except pita.
2. Add 1/4 cup mixture into each pita
Sides-> potato chips, jell-o with strawberries
Tuesday: Basil Chicken
1/4 teaspoon salt
1 good pinch black pepper
4 teaspoons olive oil
1 teaspoon margarine
6 boneless skinless chicken breast or thighs
1 tablespoon balsamic vinegar
2 heaping tablespoons honey
3 teaspoons dried basil
1. Pat dry chicken breast and sprinkle with salt and black pepper.
2. Brown chicken in oil and margarine for 5-6 minutes on both sides.
3. In a small bowl, mix vinegar, honey and basil. Pour over chicken, and cook an additional 3-4 minutes or until chicken is no longer pink.
Sides-> broccoli and brown rice, strawberries and cool whip
Wednesday: Meatless Tacos
1 (15 ounce) can black beans, drained
1 (8 ounce) can tomato sauce
2 tablespoons red onion, diced
2 teaspoons taco seasoning
1 teaspoon hot sauce
Taco shells
Topping-> 1/2 cup radishes, cleaned and sliced, 1/4 cup shredded carrots, 1/2 cup Mexican cheese
1. Preheat oven to 350 degrees F.
2. In a large skillet over medium heat, cook first 5 ingredients for 10 minutes.
3. Meanwhile, place taco shells on cookie sheet and bake for 5 minutes.
4. Remove shells from oven and spoon ingredients from skillet into the shells.
Side-> ice cream
Thursday: ham with Mac and cheese
1 pound ham, bite size pieces and browned
1 package macaroni and cheese, prepare according to package directions
1 (15 ounce) can green beans, drained
1/4 cup pineapple, diced
3 tablespoons Italian bread crumbs
Salt and black pepper to taste
1. Mix all ingredients except bread crumbs in the same skillet as ham is fried with a little oil.
2. Warm together over low heat for 5 minutes. Sprinkle bread crumbs over mixture before serving.
Side-> Applesauce sprinkled with cinnamon
Friday: Freebie Friday or leftovers
Saturday: Crab Bagels
1 cup pre-cooked crab meat flakes
3 tablespoon celery with leaves, diced
2 tablespoon green onions, chopped
1/4 cup Colby jack cheese, shredded
1/2 cup miracle whip or mayonnaise
Bagels
1. In a medium bowl, mix all ingredients except bagels.
2. Spread mixture onto a lightly buttered bagel.
3. Place under broiler until lightly brown or hot.
Sides-> cold slaw and cookies
Sunday: Ground Beef Casserole
1 pound package tator tots
1 cup sour cream
1/4 cup beef broth
2 pounds ground beef, browned, broke up, and drained
1 cup cheddar cheese, shredded
1/4 cup shredded carrots
1/4 cup yellow onion, chopped
1 tablespoon dried parsley
1/4 teaspoon paprika
1/2 teaspoon chives
Salt and black pepper to taste
1. Preheat the oven to 350 degrees F.
2. In a large bowl, combine all ingredients. Pour into a large lightly greased pan.
3. Bake for 20 minutes on the middle rack of the oven.
Sides-> cottage cheese and fruit





















I really love mac and cheese with ham! This is one of my favorites. I’m quite intrigued with the addition of green beans though. I’d definitely give it a go. Anyway my kids are into asparagus so I’m thinking they’ll probably give beans a try, too.
