“celery stalks with leaves, chopped” – any particular reason to leave the leaves on? Are most of the nutrients in the leaves?

I think I’ve finally found the cream of chicken soup recipe I’ve been looking for. I ate something like this at a restaurant and they did give me the ingredient list but I had no idea as to the amounts. The only thing that is different from their ingredients are the noodles and cottage cheese. I’ll give this a try with my leftover turkey from Christmas. Thank you.

    Stacey,
The leaves are where all the flavor is in the celery. Yes, the nutrients are in the leaves.

So how does the cottage cheese end up? Does it melt in with the soup, or does it remain in curd form like in lasagna? Sounds good, regardless :)
