Fresh and Fruity Turkey Salad

An excellent salad that is not the typical fruit salad, it is delicious for either a light lunch or side dish.

Preparation time: 10 minutes
Cooking time: Leftover turkey
Servings: 2-4
1 cup cooked turkey breast, diced
1/4 cup mayonnaise
1/2 cup red delicious apples, peeled
1/2 cup purple grapes, remove seeds and cut in half
1/2 cup pineapple chunks, drained
1/4 cup pecan halves
1 can (4 ounces) mandarin oranges, drained
1 tablespoon honey
1/8 teaspoon ground ginger
1/4 teaspoon salt

1. Mix honey, mayonnaise, ginger, and salt in a large bowl then add oranges, pineapple, apples, turkey and grapes.
2. Refrigerate 1/2 hour cover with lid, saran wrap, or aluminum foil before serving.
Tips:
1. Do not use green grapes.
2. Cut mandarin oranges in half.
Optional: Submitted dark meat for white meat.
