Simple Chuck Roast Vegetable Stew

Preparation: 15-20 minutes

Cooking Time: 6-8 hours on low

Serving Size: 4-6

Ingredients

2 pounds chuck roast, cut into bite size pieces

3 cups water

2 cups carrots, sliced

2 cups cabbage, sliced

1 large onion, sliced

2 cans 4 ounces tomato paste

1 package dry mushroom onion soup mix

3 teaspoons paprika

1 1/2 cups sour cream

1 Bag egg noodles (any size- depends on servings)

1/2 teaspoon black pepper

1/2 teaspoon caraway seeds

Salt to taste

Directions

1. place roast with water into slow cooker, than add carrots, cabbage, onions, tomato paste, dry mushroom onion soup, then sprinkle paprika, caraway seeds, pepper, and salt over the roast.

2. Cook on low 6-8 hours until chuck roast is fork tender, turn off slower cooker and stir in sour cream until its stirred well.

3. Cook egg noodles according to package directions, pour roast mixture over egg noodles.
