
Time to get your bakers cap on to enjoy these yummy cashew cookies with a kick. They’re the kind of cookies your kids will be screaming from the roof top for more and with the holidays around the corner what other way to get the party planning started.
Serving Size: 3 dozen cookies
Baking Time: 8-10 minutes
Ingredients
1/2 cup cashews (measure prior to smashing)
1/2 cup raisins
1 egg; beaten
1/2 cup margarine
1 teaspoon vanilla extract
1 cup light brown sugar; do not pack
1 1/4 cups all purpose flour; sifted
Directions
1. Preheat oven to 375; melt margarine on low in a medium saucepan; add brown sugar after removing sauce pan from heat and mix well. Crush cashews in ziploc bag. Next, add beaten egg, flour, vanilla extract, raisins and crushed cashews; mix well.
2. Grease cookie sheet; drop rounded teaspoons of dough onto cookie sheet. Bake for 8-10 minutes or until cookies are light brown. Remove cookies from cookie sheet and cool on cooling racks.
Tip 1: Use peanuts or pecans instead of cashews.
Tip 2: Double the batch and wrap cookies in cellophane with a bow for a holiday gift.


































These sound so good. I make a similar recipe instead of raisins I use chocolate chips.
