Cantaloupe Fruit Bowls

It’s hard to believe were half way through 2009 and it’s time to enjoy the gifts from the garden.

Preparation time: 5-10 min
Serving Size: 1-2
Cooking Time: None

Ingredients:
1 small cantaloupe (cut in 1/2)
1 small cucumber (sliced thinly)
1 cup strawberries (washed & sliced)
1 head lettuce, small (shredded)

Salad Dressing Mixture:
1/4 cup vinegar and oil dressing
1/4 teaspoon salt
1/2 teaspoon black pepper
3 Tablespoons fresh mint, chopped
1 teaspoon sliced almond()optional

Directions:

1. Wash all vegetables and fruit.

2. Remove seeds from cantaloupe, then scoop out melon flesh with a melon baller.

3. Arrange 1/4-1/2 cup shredded lettuce into the hallowed out cantaloupe. Next, add layer of cucumbers, cantaloupe balls, and strawberries into cantaloupe.

4. Mix together vinegar and oil dressing, salt, pepper, and mint in bowl. Pour mixture over each salad and top with slivers of almonds.

Tips:

Substitute cheese or ham as a topping.

You can also use honeydew or any other melon.
