I really love any recipe made from carrot but I’m just lazy to cook.
Hopeful,

Daisy,
Your welcome

a CUP of butter? Heck, I could eat hay with a cup of butter baked in. I think I’ll keep my carrots plain. Interesting though. But it all seems to defeat the point of the veggie, with all the fat and the crax.
Sharkbytes,
I don’t know about eating hay. You can adjust the amount of margarine/butter if you like, but I suggest you add a little extra milk for moisture. I can’t believe it’s not butter is good too.

I have never seen a carrot casserole before, but this looks mighty tasty!

Lainie,
Yeah, it’s a nice change instead of the typical casseroles.
That sounds like a yummy way to get kids to eat carrots. Good job.
Cube,
Ya, veggies can be hard to get in kids.

RE Ausetkmt,
I like how your going to doctor up the recipe . I’m not much for ginger, but a little bit goes a long way.
LOL, Girl, find yourself some Splenda or other sweetner instead. I don’t want to be liable for anyone’s hind end exploding.
