Ranch Stuffed Potatoes

Although there are a few steps to make these potatoes  it’s well worth it. The sky is the limit when creating these stuffed potatoes. They make great appetizers for parties of all kinds.Prep Time 20 min
Cooking Time 45 min
Serves 4-6Ingredients
4 large baking potatoes
1/2 cup shredded cheese of choice
1 cup ranch dressing
1 cup broccoli (finely cut)
1 tablespoon butter or margarine
1 small onion (chopped)
1 tablespoon minced garlic
Parsley (1/4 tsp for each potato)
Black pepper to taste
½ tsp

Directions

1. Preheat oven to 375 degrees

2. Poke holes in potatoes wrapped in aluminum foil and bake in oven for 35 minutes or until potatoes are fork tender.

3. After removing potatoes from oven cut them in half lengthwise. Next, use a spoon to scrap out all of potato fillings, keeping skin intact as much as possible.

4. In a small skillet saute garlic and onion in butter on low until onions are soft and see through. (You don’t want garlic to be brown or it’ll be bitter.)

5. Mix broccoli, potato fillings, garlic mixture, salt, and ranch dressing together. Spoon potato mixtures into all of the potatoes.

6. Add cheese and parsley to the potatoes and bake for 15 minutes or until cheese is melted.

Tip #1: If you’re in a pinch for time microwave potatoes in saran wrap, rather then baking them.


Tip #2: You can use just about any vegetable, cheese or meat for fillings for the potatoes.
