You could substitute the yellow squash for the zucchini in the recipe. Just use a grater to grate or shred  it first. This is the best I can do without having the actually recipe in front of me.

The acid in the lemon juice caused the starch in the pudding to break down. The problem is you already added the lemon juice so their is nothing you can do to reverse it. Next time, try this: Use Lemon extract or lemon rind for the pudding because lemon extract is made from the lemons rind (skin). Hope this helps you for next time, sorry I can not help you this time.
