Are you tired of leftovers turkey sandwiches after Thanksgiving? Enjoy the savory flavors of turkey , vegetables, herbs and spices together for an after turkey stir-fry. Stretch out your leftovers with stir-fry dishes anytime of the year.
Preparation time: 10 minutes
Cooking time: 10 minutes
Servings: 4-5
Ingredients:
3 clove garlic, finely chopped
1 pinch red pepper flakes
Salt to taste
1 cups chicken broth
2 tablespoons cornstarch
1 pound fresh or frozen broccoli (defrost if frozen), chopped
2 cups turkey, bite-size pieces or strips
1 large green or red pepper, seeds removed and cut in to strips
1 (8 ounce) can water chestnuts, drained and finely chopped
2 ½ tablespoons soy sauce
Directions:
1. In a medium bowl, mix garlic, red pepper flakes, salt, chicken broth, cornstarch.
2. In a large skillet over medium heat, cook broccoli, turkey, and
bell peppers for 2 minutes. Add water chestnuts and cook an
additional minute.
3. Add broth mixture and soy sauce. Bring to a boil for 5 minutes
or until heated thoroughly.
Tip: Serve with rice or egg noodles.
