This recipe made in pinch when I had a bunch of leftovers in the refrigerator. Once again, I was being a made scientist in the kitchen. You are never sure what kind of concoctions you will find me dreaming up. Happy Cooking.

.

Prep 15 min

Cook 45 min

Serves 4-6

Ingredients:

3 cups cooked ham

8 hash brown patties

1-cup peas

2 tbsp. minced onions

2 cans cream mushroom soup

1 cup shredded cheese

1 tsp pepper

Salt to taste

1tsp parsley

1 cup milk

1 cup water

Directions:

1. Preheat oven to 350 degrees, grease 9×13 baking pan.

2. Lay hash browns on bottom of pan

3. Layer the ham, bell pepper, onion, and peas each in a single layer; like lasagna. Be sure to spread each layer evenly so you can taste all the ingredients in each serving.

4. Mix cans of mushroom soup with 1/2 cup milk, 1/2 cup water mixing well .Pour over casserole. Sprinkle cheese and parsley over casserole and bake uncovered for 45 min .let stand for 5 min before serving.

Tip: Substitute tater tots for hash brown potatoes.

Optional: This can easily be cooked in the microwave for 20 minutes- adjust times according to microwave oven.

We always have a ham left over, this is a good idea not to throw them out on the bin if it stands for days in the fridge. Thanks for the recipe.
