Everyone wanted chicken recipes so here you go. I added another great skillet meal for you all to enjoy. The great part about this recipe is it is easy clean up after you enjoy the recipe.

Serves 4
Ingredients
1 1/2 lbs. chicken thighs, remove bones and skin
1 can diced tomatoes, diced
1 cup sliced onions
1 zucchini… Cut in bite size pieces
1-cup chicken broth or 1 chicken bouillon cube to 8 oz water
1/2 teaspoon salt
1/2 teaspoon pepper
2-teaspoon cumin
2-teaspoon cinnamon
2 Tablespoons flour
1-tablespoon vegetable oil
1 can chickpeas, 15 1/2 oz. drain
Directions
1. Place diced up chicken with all spices and flour in a large zip loc bag. Shake up bag to coat chicken well.
2. Brown onions in oil in a medium sized skillet then add coated chicken. Cook chicken for 10 minutes Next pour in chicken broth, zucchini, tomatoes, and chickpeas. Cook chicken for 15 minutes on medium heat until chicken is done.
Tip: Serve over your favorite rice.
Optional: Use yellow squash instead of zucchini.

Oh that sounds very good. I love adding zucchini into dishes, it’s pretty, tastes yummy and high in folate acid, potassium and vitamin A.
