As Promised here is my recipe for hobo stew. I hope it fills your families bellies as it has my family from one generation to the next.This recipe was originally created by my grandfather which I have added my own twist to the recipe. You know us cooks love to play mad scientists in the kitchen. While my Grandfather worked on the railroad he would cook this recipe by campfire. Its a recipe they all learned to love and he was known for this recipe.
Prep: 15 minutes
Cook: 30 minutes
Servings: 6
Ingredients:
2 lbs hamburger
2 large carrots; chopped
1 large onion; chopped
3 potatoes; sliced and peeled
1 cup elbow macaroni (substitutes okay i.e. shells etc.)
3 to 4 beef bouillon cubes
3 tsp chives ( i used fresh but, dried is okay)
Water- fill a 4 quart pot half full
1 tsp parsley
1 tsp black pepper (adjust to taste)
Salt to taste
1 tsp basil
1 tsp thyme
Directions:
1. Brown hamburger in a large pot with carrots, and onion until hamburger is browned.
2. Don’t drain the hamburger unless excessive amount of grease. (You may want to set the hamburger grease aside if you need it for extra flavor.)
3. Add remaining ingredients into pot. Simmer until macaroni and potatoes is cooked. Add Salt to taste.
Tip: Taste the broth to make sure that it is flavored well. Add extra bouillon cubes one at a time if needed.
